Kitchen 3 - Salmon mayonnaise and chcolate roulade with raspberry coulis

It was retro day today - at least partly. Yesterday we poached a whole salmon and today was "dressing up" time.

Apparently this dish was very popular in the 1970s. The dressing up was basically filleting it and then putting the fish back together keeping head and tail to make it look complete. Finally you could put half moons of cucumber on top to and garnish it with lemon wedgesa nd watercress.
Well, long story short here is what my classmate and I (we worked in teams) came up with:


Very retro! The other half of the class was spent making a chocolate roulade and a raspberry coulis. I love raspberry coulis and chocolate so loads of that for me. We had done a roulade before so this was a method we knew. In the end we just had to serve a portion.
