Demonstration 10 - Matching wine with food

Well, I guess a general thing - I assume - everybody knows is that red wine generally does not go with fish. Especially oily fish because that clashes with the tanins in the red wine and gives an awful taste in your mouth.

But what goes well with very spicy food? Or a roast? A general rule is, for example, match the way the food is cooked with the style of wine. That means roasted meats go with a strong red wine. A light salad more likely to cooperate with a light white wine.

However, again when we matched the wines with different foods, some like some matches which others thought were a "no go". So again, it might come down to your individual palate again.
