Kitchen 12 - Pain de Genes with mango and mascarpone & Smoked haddock with new potatoes, poached egg and mustard beurre blanc

A nice day. Although poached eggs could mean trouble. Also, the beurre blanc is a tricky beast. I wonder if this is a hint for the exam.

Again we were asked to come up with a unique presentation. This is emphasised constantly in connection with the exam as well.

Pain de Genes we hadn't backed before. But I do enjoy arranging various components on the plate even if it might be tricky and I could and have failed at doing a good job!

Here is my smoked haddock balanced on the halved new potatoes with the poached egg on top:
