Kitchen 31 - Lamb Kidneys, Vanilla Soufflé and Biscotti

Definitely not my day in the kitchen today. But a few people in the class seemed to feel that way.

First of all, I had the wrong kidney recipe. Then there was a long run through in the beginning and people seemed to be more confused afterwards.

Anyway, we got the biscotti on the way which went alright. But the soufflé didn't come out right. Apparently, I didn't beat the egg whites stiff enough. Oh well.

And then the kidneys and the red wine sauce. A lot of the sauces were over reduced - and so was mine. I still thought it was quite pleasant. But I understand the teacher's criticism. Well, luckily tomorrow is a new day.
