Demonstration 31 - Flavour combinations

Chocolate and garlic - that is apparently a flavour combination that works really well...according to a new book. The author of this book, Niki Segnit, has tested and researched many usual and unusual flavour combinations why they work or don't work, even getting into crazy Heston Blumenthal stuff.

All sounded very interesting and the book seems to be a great source of inspiration. One thing everybody can try is that in the well-known flavour combination of tomato and basil...

...the tomato can be easily substituted by a strawberry because they are of the same flavour group if I understood correctly.
