Exam conditions usually means that we are cooking something that we also might have to make in the acutal exam. Last term that was not the case. However, this term there are rumours about what might be in the practical exam and one of the rumours says there will be a mousseline.
If that is indeed true (which we won't find out until next week!), then today's mock exam did really help because we had to make a chicken mousseline as the filling for the ravioli.
It was all a bit hectic and it would have been nice to have an extra 5 min. But I served on time and the teacher liked my food. So I am happy and not too worried about next week.
