Kitchen 27 - Almond financiers, raspberry parfait, pannacotto and grilled lobster with beurre blanc

A lot of preparation going on for tomorrow as that is when we will be serving the pannacotta with the parfait and the financiers as well as some spun sugar.

But the main focus finally was on killing the lobster in the most "human" way which is not throwing it into boiling water. The best way is to kill it by cutting through the nervous system in the head, stabbing a large knife through it and then splitting it in half.

For the first time I grilled a lobster. An interesting new way. However, I think I prefer it boiled. The beurre blanc we served almost as usual but coloured and flavoured it a bit by adding some roe from the lobster.
