Interestingly enough egg whites should rather be older than fresh AND always be whipped in a grease-free environment - best in a copper bowl because of certain chemical reactions.
However, if you leave it in the copper bowl for too long, the chemical reaction continues and it starts to look green. Don't know if you can see it in the picture below. NEVER use a plastic bowl because plastic tends to absorb grease and you can never quite get ridd off it all. Alternatively, use stainless steel or glas!
Once this beautiful unhealthy mixture is whipped you can pipe it and create cute little beehives which actually end up looking like a little snowy forrest, I think. Wouldn't you agree? A little Winter Wonderland!?!

However, luckily we left those behind quickly and went on to seeing a meringue roulade being made (a lot more flavour!)
and a lemon meringue pie
as well as a pavlova (named after the Russian ballet dancer Anna Pavlova!)
The whole group left the class on a little sugar high!
