Demonstration 42 - Christmas cooking

Yesterday was gift cooking, today it was Christmas cooking. All the delicious food that is cooked for the Christmas holidays. If you have a traditional dish every year, maybe this time you could break the tradition and try something new.

For example have some hand-carved smoked salmon as a starter - with a most delicate lemon dressing and a tumbleweed ball of frisee lettuce:

And we had a look at what you could do with any possible leftovers, e.g. if you have turkey for Christmas, you could make a great turkey and chestnut pie or be more exotic and make a turkey and almond curry.

My favourite, however, was definitely the Madeira ice cream to accompany the Christmas cake. But there is one tradition over here that you should definitely stick to and make yourself: Little, tiny mice pies - just a wonderful amuse-bouche when they are freshly made. You can taste all the difference!


And you could change the topping as done in class - the most interesting maybe a meringue topping. Merry Christmas!
