Kitchen 34 - Pork chops with bay salt, baked custard and marinating ribs

What a brilliant class this was today! Everything worked really well.

Pork chops with some oven roast potatos and a cider-mustard-sauce were on the agenda and making baked custard to be served tomorrow, plus marinating some spare ribs for tomorrow as well.

So I started with parboiling some potatoes. Then we made the custard in pair and got that into the oven. Onto making the bay salt mixture that goes on the chops. While waiting for the potatoes to be almost ready, we had time to make the marinade for the ribs. Then onto frying the pork chops while keeping an eye on the custard in the oven. Then finishing off the meat in the oven, while making the sauce and finally serving it. Et voilà!

And you know what the great thing is. I can finally say that I am becoming more efficient with my work, meaning that my time plans work. This really makes me very happy. It is such a relief. You just don't go running around like mad anymore - you just get things done! And today even ahead of schedule. Our table of four finished the class early.
